These are a great treat to nibble on at BBQ parties or just while you’re waiting for your ribs to cook. I’ve even spritzed these with the same apple-cider spritz I use on the ribs a few minutes before I take them off.
Ingredients
- 3 rashers of smoked streaky bacon (per skewer)
- A choice of BBQ rubs (ideally honey \ sweet based), definitely low salt ones as the bacon is already salty.
- 2 tablespoons honey.
- Wooden/metal skewers – no need to soak as the temps will be low.
Method
- Set the BBQ at 275f indirect.
- Lay the bacon slices flat on a board.
- Coat both sides in your choice of rubs, shaking off any excess.
- Roll up the bacon and thread onto the skewer – three twirls per skewer (try to mix up the flavours).
- Place some smoke wood on the BBQ (I used apple) and smoke for 30-40 mins.
- If you’re cooking these alongside your ribs, give them a spritz 5 mins before the end.
- Drizzle over the honey and enjoy.
